Honey and Sesame Seed Brittle Tortes



I was given a gift from a friend of some homemade honey, so I have used it to make my taken on a Russian honey cake. These are thin honey sponge layers sandwiched with a cream containing honey and soured cream, and topped with sesame seed brittle shards.

The sponge has a gentle honey flavour, as does the cream, which adds a delicious sweetness. It works perfectly with the sesame seeds. These are perhaps an acquired taste, but personally I love it, I am happy with the slightly informal look of the tortes, with the very thin layers but causally spread cream. I think these are a winner and the use of the homemade honey made them just perfect.
