Apricot, White Chocolate and Coconut Cupcakes



These cupcakes are flavoured with coconut, and topped with a white chocolate whipped cream, spoonful of apricot jam and lightly toasted desiccated coconut.

The flavour of the coconut is strong and fresh, and it adds a lovely crunch to a soft and moist cake. The white chocolate cream is sweet and smooth with a perfect consistency. This was very pleasing as I always seem to struggle with white chocolate ganache, but it seems the high level of cream used and the method to create it was a great idea. The apricot jam adds an extra fruitiness to make these cupcakes delightful, and gives them a bright and eye-catching appearance.
