Raspberry Meringues

These meringues are filled with freeze dried raspberry powder, swirled with raspberry coulis and sprinkled with more raspberry powder.

For some reason meringues became something of a difficulty today. I struggled to get them crisp without browning on the outside. The raspberry coulis wasn't very heat stable . I think it didn't have enough icing sugar in it. Despite the colour of the meringues they have a lovely chewiness with the centre and a strong raspberry flavour. It seems more meringue practice in my oven is required to perfect them properly.
