Toffee Apple Trifle



At Halloween there is nothing much more indulgent than a toffee apple. So this trifle uses all the best flavours of autumn, with layers of caramelised apple in toffee sauce, vanilla custard, brandy soaked cinnamon sponge and cinnamon dusted cream.

The sponge is soft and light, although perhaps needed a splash of milk to loosen the mix a little as it dried out slightly once cooled. This did not matter as it was soaked in the brandy syrup and so became a lovely addition to the trifle. The toffee sauce is sweet and rich, and delicious with the apple. The whole thing is an absolutely delicious combination. You can't beat a trifle for dessert, and this one takes the traditional dessert to the next level.
