Strawberry, Black Pepper and Balsamic Chorley Cakes



I have baked some traditional Northern chorley cakes. They are shortcrust pastry filled with dried strawberries soaked in balsamic vinegar and mixed with a little black pepper, all dusted with sugar.

The pastry is crisp, crunchy and short. The fruit filling is sweet, chewy and moist with the balsamic and pepper giving it a great depth. They are simple yet absolutely delicious and a great version of a chorley cake.
