Lime, Pistachio and Orange Blossom Savarin
This week's Bake Off technical bake, I have made a savarin, a yeasted cake, with lime zest and chunks of pistachio nuts, soaked in a lime, orange blossom and orange blossom honey syrup and sprinkled with more chopped pistachios.
The savarin itself was proved and baked perfectly, being light and soft with a lovely texture. The flavour of the lime and addition of the crunchy pistachio nuts made it even better than the usual version. The syrup is sweet and slightly tangy which adds a delicious moist flavour. I used a new, smaller, tin and this meant that the savarin ended up taller than I wanted meaning the syrup didn't penetrate the whole way down. This is the only down side to the bake, but it tastes fantastic nonetheless.
