Rhubarb and Custard Angel Slices

This is my love affair with Mr Kipling. They are angel cakes with a pink and yellow sponge, buttercream filling and icing top. However, they aren't the usual vanilla cakes. Instead the pink sponge is filled with rhubarb puree and the yellow is flavoured with custard. They are sandwiched with a custard flavoured buttercream.

Much to my delight, the flavour of the rhubarb came through well and gave a very moist sponge. The custard could also be tasted and was delicious with the fruit. I think these look just like the traditional angel cake slice and, if I dare say, taste even better!
