Coffee and Maple Buttercream Biscuits
These are some light brown sugar fork biscuits flavoured with coffee and filled with a maple syrup buttercream.
The biscuit itself took two attempts due to a lack of attention to detail on the first, where I didn't mix the coffee extract into the butter and sugar mix well enough before adding the flour, resulting in lumps of starchy coffee. I then didn't roll them and flatten them neatly enough so they looked a bit too rustic. So, second attempt, improvements made and they are spot on. The flavour is strong but not bitter and tastes great with the sweet buttercream. They aren't an especially complicated bake but are delicious nonetheless.
