Pine Nut and Lemon Baklava



These baklava triangles are layers of homemade filo pastry with a cardamom spiced pine nut filling and soaked in a lemon and lemoncello flavoured syrup.

The filo stretched out far better than any of my previous attempts, being easier to manipulate and make paper thin. I put this down to my distraction with doing washing and ending up resting it for twice as long as normal. It meant that the resulting pastry baked to be light, flaky and crisp with a lovely golden brown colour. The pine nuts give a buttery flavour along with a lovely crunch. The syrup is of perfect consistency so that it made it sticky and sweet but the pastry retains its crunch. It also made a lot less mess than last time, which saw most of the syrup leaking out of the tin. This means it is even more of a success!
