White Chocolate, Mango and Cardamom Sponge Pudding

This is the unintended result of today's baking. It is a white chocolate sponge pudding flavoured with ground cardamom and mango puree.

The planned pudding was a fondant however, after two attempts I still ended up with no runny middle. I think the first go was due to over baking, and the second because I didn't have enough egg left to use. Back to the drawing board with this recipe I think. It did, however, result in a rich sponge pudding with a wonderful subtle cardamom spice and sweet mango flavour. As desserts go, they are delicious and would be perfect with a scoop of ice cream.
