Pulled Pork and Apple Puff Pasty
This is a perfect pasty for a lunch on a warm summer day. It is puff pastry filled with pulled pork flavoured with apple juice and bay leaves.
The pork itself has a delicious flavour. The apple is just strong enough to complement the pork. The use of pork shoulder created wonderful soft and tender pulled pork, with just the right level of fat to ensure it was moist and tasty. The puff pastry was light and buttery. For once I managed to seal the puff almost perfectly, with no leakage of the filling. I am very pleased, and very much enjoyed eating this. I should have made more!
