Strawberry and Kiwi Eton Mess Tarts
A bake set for May Day. These are some miniature sweet shortcrust pastry tarts filled with an eton mess mixture of double cream, homemade meringue pieces, chopped strawberry, kiwi and strawberry coulis, all topped with a strawberry half decoration.
The pastry itself is crisp and short with a perfect level of sweetness. They are baked just right, with no soggy bottom and light brown round the edges. The filling is creamy and full of the flavour of strawberry and kiwi, both of which are refreshing and summery. The meringues give a lovely crunch (if eaten before they go soggy) and make for a delicious tart.
