Strawberry Jam and Clotted Cream Butterfly Cakes
Spring is perfect time for a cream tea. So, I have made mine into a butterfly cake. These are clotted cream cakes with vanilla seeds, topped with strawberry jam flavoured with a little balsamic vinegar and black pepper, then a spoonful of clotted cream and a dusting of icing sugar.
The cake itself is light, soft and has a wonderful texture, with a delicious vanilla flavour and a richness from the clotted cream. The jam is full of fruity strawberry sweetness, with its flavour being enhanced by the black pepper and balsamic. The clotted cream topping marries perfectly and beats buttercream hands down!
