Marmalade Gateau Breton



This is a French-British hybrid bake. It is a traditional French Gateau Breton with a traditionally British filling of orange marmalade.

The biscuit itself is crisp on the outside and slightly softer in the middle, with a lovely crumb and almost cake-like texture, as desired. The marmalade is orangey and tangy, with the sweetness of the biscuit bringing out its flavour and cutting through its otherwise tartness. This is simple but buttery and delicious.
