Lime, Pineapple and Coconut Iced Buns

These are a bake perfect for the sunny weather we are being blessed with. They are buns flavoured with lime zest, filled with a lime and pineapple curd and topped with lime icing, lime zest and toasted dessicated coconut.

The dough itself is perfectly soft and baked just right. The buns merged together as desired from iced buns, although placing them a couple of millimetres closer would have resulted in a sightly straighter edge. There is a fantastic citrus kick from the lime in the dough and the icing, and the curd is wonderfully fresh and fruity. The coconut on top makes them look that little bit extra special and adds an extra texture to the bun, I am over the moon with these and very much enjoyed sitting in the sunshine eating them.
