Plum and Blackberry Steamed Suet Pudding



This is something I have been wanting to make for a while and have finally got round to it. It uses one of my favourite things, suet. It is a suet pastry crust filled with diced plum and blackberries mixed with a little sugar, lemon zest and lemon juice.

The pudding was steamed just right so the pastry was soft and the fruit cooked to soft. The flavours are great, and the amount of sugar included spot on. The problem encountered is the strikingly obvious pink tinge on the pastry from some leakage of blackberry juices. But, I guess it could be thought to look pretty and artistic!
