Rhubarb and Star Anise Cake



I have been making use of some seasonal fruits, using proper rhubarb (not forced). This is a cake made with ground almonds and flavoured with star anise, with a central and top layer of rhubarb and a sprinkling of flaked almonds.

The cake itself has a wonderfully moist and light texture due to the ground almonds. The star anise gives a very subtle undertone but could perhaps have done with infusing in the milk overnight, or some ground finely to give an extra boost. The rhubarb can be tasted and is delicious. I think it looks great and tastes fantastic too!
