Lemon and Blueberry Eclairs



Today I faced one of my fears again, baking choux pastry. These are some eclairs topped with craquelin, and filled with a creme legere flavoured with lemon zest and a spoon of lemon curd and dotted with fresh blueberries.

I am over the moon with the result of today's baking challenge as I actually managed to produce some perfect choux pastry for the first time in ages. It was light and full of air, had a great shape, and was well dried out inside to be crisp. The craquelin on top adds a wonderfully crunchy texture and makes them look chic and attractive. The filling has a light lemony taste and complements the blueberries wonderfully. A very good result I think!
