Coffee, Caramel and Macadamia Mousse Pot
Today I have been baking a light dessert. It is a coffee mousse base topped with a set caramel layer and caramelised macadamia nuts.
The coffee mousse is a lovely creamy consistency, although was not without problems in the making due to the small quantities I was working with. The caramel is wonderfully sweet and cuts through the coffee flavour perfectly. It is tricky to cut through however softens in the mouth to a wonderfully smooth texture. The macadamias add a great flavour and a much needed crunch to the dessert.
