Smoked Mackerel and Cherry Tomato Filo Tart



I have been making a perfect picnic tart. This is a filo pastry case filled with smoked mackerel, chopped spring onion, cherry tomato halves and a quiche mixture flavoured with parsley.

The filo layers are wonderfully crisp, well browned and flaky, offering a light pastry case. The quiche filling is set well with a great flavour, with the smoked mackerel being strong and delicious. This is a fantastic bake to take out on a hot day for lunch!
