Salted Caramel Tortes



These are some individual cakes that are a bit of a take on a dobos torte. They are five layers of whisked sponge with a salted caramel swiss meringue buttercream topped with a salted caramel glaze.

The cake is light and delicate, not too rich with a lovely sweet flavour. The addition of the salt brings out this sweetness well but can't be tasted as salt itself so is nicely balanced. The cream is buttery and rich, with just enough caramel flavour. It was hard to incorporate my caramel sauce into it as I made it too set, so perhaps a little more cream was needed. The glaze is shiny, smooth and well set, although I would perhaps use a little less gelatine next time to make is less jelly-like. But, other than this, I would say it is delicious and pretty close to perfect.
