Tutti Frutti Biscuits

These are some biscuits based on the popular tutti frutti ice cream. They are flavoured with lemon zest and have pieces of candied peel and chopped dried cherries.

The biscuits themselves are baked to just brown and very crisp, as they should be. The dried fruit gives a texture contrast from their softness. The lemon flavour is strong giving them a fresh taste, and complements the candied peel and cherry pieces well. They are delicious, and would be great served with a scoop of tutti frutti ice cream.
