Leek and Chorizo Empanadas



These are some little pies perfect for dinner in the sunshine. They are fried empanadas made of a paprika spiced oil pastry filled with a mixture of leek and chorizo spiced with chilli flakes, garlic and basil.

The pastry is crisp, thin and light with a lovely crunch. It isn't too greasy as they are well drained preventing any aftertaste of oil. The filling is spicy and tastes delicious, with the paprika in the pastry elevating the flavours further. The crimping sealed the pies well but perhaps needs a little work to perfect it further, but it is one of my best attempts so far. These are delicious snacks that transport you straight to Mexico!
