Coffee Fondant Fancies



These are some fondant fancies perfect for an afternoon tea. They are a coffee sponge square brushed with apricot jam and topped with almond marzipan, coated with coffee buttercream, dipped in coffee fondant icing and drizzled with dark chocolate.

The cake is light and soft due to the more liquid batter from a lower butter and sugar content but the inclusion of milk. The coffee flavour is just right and therefore goes well with the coffee flavoured buttercream and icing. The tastes of the whole thing balance wonderfully, although the marzipan could possible have done with less of a heavy hand with the almond extract. Nonetheless, the almond flavour does go with the coffee. These are absolutely delicious, elegant and I am very happy with the results! Much better than my previous fondant fancy attempts.
