Thyme Summer Berry Pie



This is a summery double crust fruit pie with a shortcrust pastry filled with a berry mix of blackcurrants, redcurrants, blackberries, raspberries and strawberries, flavoured with lemon zest and thyme, with a granulate sugar sprinkle topping.

The pastry is well browned and crisp on top and about 2 minutes from perfection underneath. There is no actual soggy bottom but it would perhaps have appreciated a little longer in the oven. The fruit filling has the right sweetness and a fresh fruity flavour, with the thyme giving a delicious herby hit that takes it from a bog-standard fruit pie to something wonderful. This is a perfect summer dessert.
