Berry Pavlova Meringue Kisses



These were a challenging bake, despite the potential to be simple. They are some meringues brushed with white chocolate and filled with a raspberry, blueberry and blackberry ripple whipped cream.

It seems that my quick way to use up leftover egg whites is not one that is easy in the hot weather. They were light and crisp, although went sticky in the heat in a few hours so required rebaking. The cream was delicious with a lovely berry flavour. It did melt in the heat but when eating them straight away they were great!
