Bailey's Chocolate Fondant



My mum's birthday dessert is a chocolate fondant flavoured with a dash of Bailey's.

It took two baking  attempts with a slight adjustment of baking times, but I managed a fondant dessert that had a soft and gooey centre. The chocolate flavour is dark and rich due to the 70% cocoa chocolate used, and the baileys gives it a slight kick, although could easily be doubled in quantity used. The cocoa powder dusting on the mould left a slight skin on the outside of the fondant so I think a bit of experiment with the greasing is needed. It also perhaps needed a little dusting of icing sugar to increase its elegance. Nonetheless, this is a naughty indulgent dessert great for any chocolate lover.
