Grapefruit Curd Party Ring Sandwiches

These are my take on a party season favourite, the party ring. They are vanilla sandwich biscuits filled with a grapefruit curd and topped with feathered icing decoration.

The biscuit itself is crisp, buttery and perfectly baked. The icing adds a lovely sweetness and looks great, although the feathering took two attempts to get right. The pink is perhaps a little too light but makes them very pretty looking. The grapefruit curd is strong in grapefruit flavour, with the perfect amount of sugar to make it slightly tangy but not sour. I am very pleased overall with the biscuits, although will keep practising my icing feathering!
