Blackberry and Cardamom Swiss Roll
This is me experimenting with decor paste, making a cardamom spiced swiss roll with decor paste flowers and a blackberry jam.
The sponge is very light and delicate in texture, although perhaps a little too much and I personally would have preferred a slightly denser cake (but I'm sure most people would disagree with me!). The cardamom flavour is just right to be subtle and complement the fruit, but not be too strong and overpowering. The jam is sweet and full of blackberry flavour but could have done with some of the blackberry seeds being removed due to the striking contrast between the crunch and the light sponge. Other than that, I am very happy as the decor paste worked excellently!
