Lemon and Elderflower-misu Cake
This is my summery version of a tiramisu cake. It has four whisked sponge layers soaked in a lemon and elderflower syrup, a mascarpone cream flavoured with lemon curd and topped with candied lemon peel.
The sponge was light and delicate, and the syrup had a refreshing sweet and lemony flavour, with a perfect amount of elderflower to complement it. The cream was soft and delicious, and full of lemon flavour. The whole thing came together elegantly and was perfect, although did require a lot of chilling in this hot weather to ensure a clean cut. It was a great dessert!
