Summer Vegetable Stew Bread Pie
This is a summery pie with a difference, it is made from a bread dough instead of pastry so roughly resembles a calzone. It is two layers of bread filled with a mixture of courgette, pepper, red onion and tomato in a lemon, garlic and parsley sauce, sprinkled with poppyseeds.
The bread itself was given time to rise for 2 hours and so became very elastic and light. The filling is full of flavour and absolutely delicious, perfect for a summer picnic or dinner in the sunshine. It did not quite look as I intended so next time I would use the dough as one piece, fill it and seal it underneath to see if it makes a more elegant parcel. Nonetheless, it baked well as there was just the right amount of moisture to prevent the blowing up of the dough into an air pocket. I am very happy with it despite the imperfections.
