Chocolate and Walnut Macaroons



These are some macaroon biscuits made from a combination of ground almonds and walnuts, topped with a dark chocolate ganache and walnut half.

The macaroon itself is one of  the best I have made, having the characteristic and informal rough round shape. It is crisp on the outside and slightly soft and chewy in the middle. The flavour of hte walnut is earthy and delicious and works wonderfully in combination with the smooth chocolate ganache topping. I am very pleased with these.
