Raisin and Pecan Isle of Wight Doughnuts
These are my version of Isle of Wight Doughnuts. They are a basic enriched dough filled with nutmeg spiced raisins and pecans before being fried and coated in caster sugar.
The dough is perfect in texture, flavour and consistency. It rose well producing deliciously light buns. The filling is spiced just perfectly and adds a lovely crunch. The sugar coating gives a great sweetness to the doughnuts. Once I realised I needed to ensure they were completely sealed before frying, I had great success. In future, I would make the balls and just gently press in the filling and just seal over rather than rolling again as the raisins were a little close to the top of the doughnuts, but other than that they are fantastic.
