Blueberry Cheesecake Cookies



I have been baking some sweet treats for my work colleagues seeing as I shall be leaving in the next week. I thought I would relate it to American Independence Day and so made some blueberry and vanilla cookies sandwiched with vanilla cream cheese.

The cookie itself is crisp on the outside and soft and gooey in the middle, and are wonderfully brown from the inclusion of light brown sugar. This has also given them a rich flavour. They did not crack when spreading as I would have hoped so would perhaps include a little more raising agent in future, but other than that they are delicious. The cream cheese filling is slightly savoury and completments the very sweet biscuit. I do hope they enjoy them!
