Earl Grey and Honey Semolina Cake



This cake was an experimental one. It is a whisked sponge made with a high proportion of semolina instead of flour, and is flavoured with honey and earl grey tea.

I am very pleased that my recipe worked, and it produced a light yet moist sponge due to the separated egg method used and the large amount of honey. It is a very simple cake but is delicious and perfect for a summer afternoon.
