Pimms and Strawberry Jam Coil Loaf

This is a coiled sweet dough loaf filled with a summery strawberry jam flavoured with orange juice, lemon juice and Pimms.

The bread was perfectly risen so has a wonderful texture, being soft and light. The jam is sweet and fruity, with the strawberry flavour being enhanced by the Pimms making for a delicious filling. It was a little too soft set so making it difficult to roll up, and my indecision in how I was going to coil it led to weaknesses where the jam leaked out a little during baking. But all in all, the end result was far better than I anticipated, especially on the basis that when it was baking I thought it was going to be a complete disaster! With less faff it could have been perfect, so this recipe is definitely still a keeper.
