Apricot and Peach Schnapps Victoria Sandwich Loaves



These are some cakes perfect for an afternoon tea in the sunshine. They are mini victoria sandwich loaves dusted with icing sugar, and filled with a peach schnapps sweetened whipped cream and fresh apricot slices.

The cake is light with a soft crumb. They did not brown well in my oven, but did bake perfectly. The alcohol in the cream has a lovely peach flavour that enhances the apricot. They are absolutely delicious, and very elegant.
