Tropical Fruit Loaf Cake

For christmas I received a pot of mango and cranberry mix from Waitrose consisting of dried mango, cranberries, ginger chunks and raisins. I have used this to bake a loaf cake flavoured with a hint of ginger and topped with drizzled icing.

The cake itself has one of the best textures in a cake I have made for a while. It is soft and light, yet buttery and delicious at the same time. The fruit has a great flavour and the ginger complimetns it wonderfully. I think this was a very good use of my christmas present!
