Rose, Walnut and Pistachio Baklava
This is my second attempt at a baklava. It is comprised of homemade filo pastry layered with butter and filled with a mixture of chopped walnuts and pistachios spiced with cinnamon, allspice and cardamom. It is soaked in a lemon, honey and rosewater syrup and topped with chopped nuts.
The pastry itself is crisp and flaky due to there being 6 pieces per layer and the brushing of butter in between. The nuts are just the right size and provide a welcome crunch. The spices are wonderfully balanced and marry with the rose water well. The syrup is the perfect consistency to be sticky and sweet but leave the pastry crisp, although some of it did leak out my tin (I need to learn to think about these things beforehand). This is delicious and a great success!
