Lime and Cointreau Cream Horns





These are a long awaited bake. They are some rough puff pastry cream horns dipped in dark chocolate and filled with lime curd, lime and cointreau whipped cream, and topped with a piece of candied lime. 

The puff pastry is light and well puffed but took a while to brown in my oven. The homemade moulds worked reasonably well although they took further baking to ensure that the middle wasn't soggy as card doesn't tend to conduct heat particularly well!  They look elegant and uniform and the flavours taste great. I am very happy with this success!
