Strawberry and Raisin Lardy Cakes





These are some individual lardy cakes filled with dried strawberries and raisins, sprinkled with caster sugar.

The outside of the cake is crisp and crunchy due to the high temperature baking and caramelised butter and lard mixture. The fruit is sweet and delicious, having just enough flavour to add a light taste to the dough. These are very moreish and definitely worth the mess they made of my oven!
