Passionfruit, Ginger and Cream Cheese Cupcakes
These are some miniature cupcakes as little petit fours. They are a light brown sugar sponge topped with cream cheese, passionfruit, lemon and ginger curd and a ginger star biscuit.
The sponge is light and has a delicious flavour from the brown sugar. The curd is sweet with a strong passionfruit taste, although the ginger could come through even more. The cream cheese posed issues as the first batch of frosting didn't hold its shape well (until I had decorated these) and so I used just cream cheese. This adds a more savoury not which wasn't intended. However, I quite like this addition. More cream cheese experiment needed, but other than that they look great and taste pretty good too!
