Brandied Cherry Steamed Sponge
There isn't much better to warm yourself on a cold and snowy winter day than a steamed sponge pudding with a touch of alcohol. The brandies are cooked in sugar and brandy and marry with a plain sponge.
The taste of the cherries was just right, with the perfect balance of sweetness and hint of booze. The sponge is very light and full of air, perfectly cooked so it is still moist. The slightly bland nature of the plain sponge is not a problem due to the flavour of the fruit. There is no other flavours required to add to it. It is just right.
