Banana and Brazil Nut Florentines
I have been making some delicate biscuits. These are florentines made with banana chips and chopped brazil nuts, brushed with melted dark chocolate.
I experimented with a new recipe for these, trying a less Mary Berry style approach and opting for one with cream and very little flour. The result was a light thin and lacy biscuit with a delicious crunch from the fruit and nuts. The chocolate is dark and rich but used sparingly, working wonderfully with the other flavours. They were a success.
