Caramelised Pear and Candied Pecan Meringue Torte





Today I have been testing my oven once again. I have made a meringue torte consisting of three meringue layers made with both caster sugar and light muscovado sugar filled with vanilla chantilly cream, caramelised pear slices with a slight caramel sauce, candied pecan topping and pecan sprinkled meringue sticks.

The meringue was dried out and crisp (until I filled it with cream) with a delicious light caramel flavour from the light muscovado sugar. The pecans from the topping have wonderfully strong flavour and perfectly match the sweet pear slices. It is a delicious dessert, perfect for a winter day.
