Cock-a-leekie Suet Pie




This is my take on the traditional Scottish cock-a-leekie soup. It is a suet pastry crust enclosing a chicken and leek filling flavoured with thyme, parsley and bay.

The flavours of the inside of the pie are just right, with a strong bay and thyme flavour. The pastry is delicious, however was not achieved perfectly. Some of the fat once again decided to make its way to the bottom of my oven and therefore the edges are slightly more robust (and took a bit of chipping off the dish). But this just led to a more crisp result and was therefore fantastic.
