Honey and Lavendar Shortbread
Shortbread is one of the foods synonymous with Scotland and so I have been baking some reading for Burn's night. These are shortbread petticoat tails flavoured with lavender and honey and sprinkled with caster sugar.
The biscuit itself browned faster than I expected in the oven however is cooked to perfection, with it being just crisp but buttery and moist at the same time. I am very happy with the balance of the floral lavender flavour and the honey. It is not too overpowering yet makes it delicious. The petticoat tail design worked even better than I anticipated. I am very happy with the results!
