Pomegranate and Almond Angel Food Cake
Today's bake involved a little DIY. This is an angel food cake with a hint of almond flavouring, coated in an almond boiled icing. It is topped with a pomegranate coulis and toasted flaked almonds.
I had no intentions to invest in a tube pan just to make this cake and so with a 7 inch spring form tin, piece of foil and toilet roll tube (yes I did cover it so it didn't touch the cake!) I managed to make my own. I did not expect it to work but surprisingly it was perfect. The cake clung to the sides of the tin and rose well. It could be cooled upside down as the sponge was firmly stuck and so it did not sink. It has the light aerated texture of an angel food cake with a delicious frosting with a subtle almond flavour. The icing is a little grainy on the outside as for some reason a lot of the sugar got stuck towards the bottom of the bowl and didn't dissolve. But for a first attempt at the cake and the frosting, I'm very happy with the results!
