Chai Latte Whoopie Pies





These are some American whoopie pies. They feature a chai spiced sponge made with light brown sugar and are filled with a vanilla and chai buttercream.

The flavour of the chai is just right, without it being harsh and overpowering. The cake itself is light and soft, however it could perhaps have done with a couple of minutes less in the oven or a little bit more yoghurt to make it a little more moist. They spread well although I would have liked a more circular finish on the cakes. Next time, more patience in spreading and shaping the mixture I think. Despite this, I am very happy with the cake that resulted.
