Whisky, Orange and Marmalade Brioche Pudding






After a few days of eating stale brioche it was at the right state to make it into a bread and butter pudding. This is a combination of orange and caraway seed brioche spread with marmalade, dotted with sultanas soaked in orange juice and baked in a whisky custard.

The flavours were fantastic with the combination of the strong orange from the brioche and the fruit with the tangy marmalade and subtle whisky undertone. The top was crisp and the inside soft and custardy. I would perhaps add a little more milk to make slightly more soaking custard, but other than that the balance was perfect. Delicious!
